LAVENDER AND CACAO, SWEET AND SALTY ENERGY BALLS
Snacks? Sweet? Salty? ROOTED LONDON knows it's tough to decide what taste to go for to perk up a mid afternoon slump. What we do know however, is that a mix of protein and natural sugars always give the best natural high, so by getting creative in the kitchen one afternoon we started working on a way to incorporate some of our favourite flavours into a snack that satisfies both sweet and savoury desires.
Lavender works in harmony with honey and with its natural sweetness, works wonders with raw cacao, which does have a bitter taste. Blend this baby with a mix of nuts, dates and apricots and gang, we have a winner.
Remember here it is key to have a good blender; we use a MAGIMIX.
Makes 18-22 balls, dependant on size
- one cup cashew nuts
- quarter cup almonds
- quarter cup brazil nuts
- one cup dates
- three quarter cup dried apricots
- one teaspoon of lavender (dried)
- 1-2 teaspoons cinnamon (personal preference here)
- one tablespoon of organic raw honey
- two tablespoons of raw cacao nibs
- half teaspoon of pink Himalayan salt
- one teaspoon coconut oil
Add the nuts to the blender and blend until smooth but with a few chunkier pieces within the mix. Add the rest of the ingredients and blend until the consistency holds when pressing with your fingers. Using a tablespoon to measure, take a good spoonful and use your palms to press firm and then roll into a ball.
These can keep in the freezer for a month or the fridge for up to a week - that's if you can resist not eating them all in one go.
These are a great on-the-go snack (one to two), great alongside a nut mylk at breakfast or alternatively, don't roll them into balls and use the mix as a topping for smoothies, porridge or chia seed puddings.
