Buckwheat is a protein rich, gluten free grain, known for it's nutty flavour. Using buckwheat, soaked overnight it softens the grain and allows for a creamy texture. You can add just about anything to a buckwheat bircher but we've found this combination works the best.
You can make a bigger batch as it will last 2-3 days in the fridge.
- 100g buckwheat groats
- a small handful of cashews
- 50g blackberries
- 1 teaspoon of acai powder (optional)
- zest of one lemon
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon raw honey
- 2 tablespoons coconut cream or milk
For the garnish - you can use anything here but we have used:
- 1 tablespoon of mixed sunflower and pumpkin seeds
- 1 teaspoon goji berries
- a pinch of linseeds
Soak the buckwheat groats and cashews in water overnight. When you are ready to serve and eat your bircher, save a few blackberries for the garnish and blend all of the ingredients until you get a smooth texture. You can add a little more almond milk or coconut cream / milk here if you like a lighter consistency.
Garnish, serve and enjoy.
